After several days on the road scouting for a film location, Shannon sends me a text “shall I make us some dairy-free cheesecake?”….”OK” I hastily replied! My favourite desert EVER, is cheesecake! But because most are made from dairy (cream cheese), I haven’t been eating it… yeah, its been real tough! Sure I could cheat, its not like I’m allergic to dairy. No, it’s because our body doesn’t need dairy nor do I think cows should go through inhumane conditions for us…. and I’m not going to cheat on my own ethics! This recipe is raw, its dairy and gluten free, its delicious and if you eliminate the honey it’ll be sugar free too! Stick to Green & Blacks chocolate for this recipe, its so devilishly healthy compared to other sugar loaded brands! Its pretty easy to make… from where I was standing anyway. Figs are in season at the moment (in NZ). Yesterday I had stopped at a roadside store in Kutatere (Bay of Plenty) and paid $8 for a bag of organic figs. Maybe figs are cheaper in the store to buy, but buying organic and supporting local businesses is my thing.
Need a savoury fix? Mushroom and Lentil Rolls… with home-made Tomato Sauce…I kid you not!! NO MEAT, just the pure taste of fungus and legumes all wrapped up in that golden goodness, dipped in fresh home-made tomato sauce. Yummy!
When I’m picking tracks I usually avoid those that start with ‘Mt’, I have images of blizzards, frost bite or rescue teams. HOWEVER, we are in Auckland and there are no alpine mountains – at all. Mt Zion is probably the easiest Mt in NZ, the car park is at the top!
Mint and honey add a snazzy combination to the Aubergine, dip them in the lemon juice and its divine! Great as an appetiser.
This is so easy, I always have Quinoa, nuts and almond milk handy. Today, I really couldn’t be bothered with another salad so I quickly whipped this up. You can have it for breakfast too, its a great starter for the day. Quinoa Afternoon Boost Vegan / Dairy-Fee / Gluten Free 1/2 – 1 cup of any cooked Quinoa – have more if hungry 1/2 cup mixed nuts 1/2 cup dried fruit Few berrys or any fruit – I use frozen berries, they defrost quickly Lemon Zest Drizzle Olive Oil Almond Milk – I make mine but organic versions are always nice to buy and have in the fridge for these moments Add the Quinoa to a plate/bowl, zest the lemon and drizzle the olive oil. Throw on the nuts, fruit and berries. Add your Almond Milk and hey presto you have a quick sustaining afternoon boost! Its that easy, but add what ever you want to it to make it tastier. Some people add salt but I’m good without it.
Usually I have a smoothie in the morning but in the weekends before I go tramping I like to have muesli with cashew cream (yum), so easy to make too.
