After several days on the road scouting for a film location, Shannon sends me a text “shall I make us some dairy-free cheesecake?”….”OK” I hastily replied! My favourite desert EVER, is cheesecake! But because most are made from dairy (cream cheese), I haven’t been eating it… yeah, its been real tough! Sure I could cheat, its not like I’m allergic to dairy. No, it’s because our body doesn’t need dairy nor do I think cows should go through inhumane conditions for us…. and I’m not going to cheat on my own ethics! This recipe is raw, its dairy and gluten free, its delicious and if you eliminate the honey it’ll be sugar free too! Stick to Green & Blacks chocolate for this recipe, its so devilishly healthy compared to other sugar loaded brands! Its pretty easy to make… from where I was standing anyway. It takes about 45 mins to prep and then an hour standing by the fridge waiting for it to set! I felt like my face had been through some tough conditions while on the road, it …
Figs are in season at the moment (in NZ). Yesterday I had stopped at a roadside store in Kutatere (Bay of Plenty) and paid $8 for a bag of organic figs. Maybe figs are cheaper in the store to buy, but buying organic and supporting local businesses is my thing.
This smoothie came about when I was making cacao and pistachio bliss balls. There is always cacao in my cardboard and berries in the freezer. Because I don’t eat dairy, almond milk is a must in the fridge at all times. Oh and chia seeds, these tiny little things pack a punch when it comes to sustaining consistent energy. They should be classed as a super power, maybe they already are!? Cacao and Berry Smoothie – Sugar Free / Dairy Free Ingredients: 1 1/2 cups organic almond milk 1 cup frozen berries 1 banana 1 Tbsp raw cacao powder 1 Tbsp chia seeds Method: Mix it all in a blender and sprinkle with some coconut and nuts Enjoy! I’m still buzzing from this!
Mint and honey add a snazzy combination to the Aubergine, dip them in the lemon juice and its divine! Great as an appetiser.
Usually I have a smoothie in the morning but in the weekends before I go tramping I like to have muesli with cashew cream (yum), so easy to make too.
